Need a quick and healthy lunch idea?
Teriyaki rice paper rolls work for me; they are a fresh light and easy lunch. They are however, sometimes too fiddly for me to put together. So with my focus on keeping it simple – why not use the filling in a sandwich or wrap it in a lettuce cup.
This one’s made from some leftover barbecue chicken (shred about 160g), with a grated carrot, thinly sliced capsicum and shitake mushrooms, some bean sprouts and a bit of coriander. Toss together with 2 tablespoons teriyaki sauce and 1 tablespoons sweet chilli sauce and fill whatever it is you’re filling. This makes 12 rice paper rolls (and can be served with extra sweet chilli sauce), or a couple of sandwiches or several lettuce cups.
